                      Patriotic Berry Trifle


Ingredients

1/4 cup plus 2/3 cup sugar

1/4 cup fresh lemon juice

1/4 teaspoon almond extract

1 premade angel food cake, cut into 1-inch slices

1 pound cream cheese, at room temperature

2 cups heavy cream, at room temperature

2 pints blueberries

2 pints strawberries, hulled and sliced




Directions

Heat 1/4 cup sugar, the lemon juice and 1/4 cup water in a saucepan over medium-high heat, stirring, until the sugar dissolves. Remove from the heat and stir in the almond extract.

Brush both sides of each slice of cake with the syrup. Cut the slices into 1-inch cubes.

Beat the remaining 2/3 cup sugar and the cream cheese with a mixer on medium speed until smooth and light. Add the cream and beat on medium-high speed until smooth and the consistency of whipped cream.

Arrange half of the cake cubes in the bottom of a 13-cup trifle dish. Sprinkle evenly with a layer of blueberries. Dollop half of the cream mixture over the blueberries and gently spread. Top with a layer of strawberries. Layer the remaining cake cubes on top of the strawberries, then sprinkle with more blueberries and top with the remaining cream mixture. Finish with the remaining strawberries and blueberries, arranging them in a decorative pattern. Cover and refrigerate 1 hour.

** CHICKEN CAPRESE

This recipe for chicken caprese is grilled seasoned chicken, topped with fresh mozzarella, ripe tomatoes, basil and balsamic reduction. A quick and easy dinner that's easy enough for a busy weeknight but special enough to serve to company!

** Ingredients
------------------------------------------------------------
* 1 lb boneless skinless chicken breasts
* 1 tablespoon olive oil
* salt and pepper to taste
* 1 teaspoon dry italian seasoning (or equal parts of garlic powder dried oregano and dried basil)
* 4 thick slices of ripe tomato
* 4 1- ounce slices of fresh mozzarella cheese
* 2 tablespoons balsamic glaze or balsamic reduction
* 2 tablespoons thinly sliced basil


** Instructions
------------------------------------------------------------
* Heat a grill or grill pan over medium high heat.
* Drizzle 1 tablespoon of olive oil over chicken breasts and season to taste with salt and pepper. Sprinkle italian seasoning over the chicken.
* Place the chicken on the grill and cook for 3-5 minutes per side, or until done. Cook time will vary depending on the thickness of your chicken breasts.
* When chicken is done top with a slice of mozzarella cheese and cook for 1 more minute.Remove from heat and place chicken breasts on a plate. Top each breast with 1 slice of tomato, thinly sliced basil and salt and pepper to taste. Drizzle with balsamic glaze and serve.

                      ** RASPBERRY TERAMISU
------------------------------------------------------------

1 cup seedless raspberry jam

6 tablespoons orange liqueur (recommended: Grand Marnier)

1 pound mascarpone cheese (at room temperature)

1 cup whipping cream

1/4 cup sugar

1 teaspoon pure vanilla extract

28 soft ladyfingers or 2 (12-ounce) pound cakes cut into 3 by 1 by 1 1/2-inch pieces

3 (1/2 dry pint) baskets fresh raspberries (about 3 3/4 cups total)

Confectioners' sugar for serving



                        ** Directions
------------------------------------------------------------
1. Stir the jam and 4 tablespoons of the orange liqueur in a small bowl to blend.
2. Combine the mascarpone and remaining 2 tablespoons of orange liqueur in a large bowl to blend. Using an electric mixer, beat the cream, sugar, and vanilla in another large bowl until soft peaks form. Using a large rubber spatula stir 1/4 of the whipped cream into the mascarpone mixture to lighten. Fold the remaining whipped cream into the mascarpone mixture.
3. Line the bottom of a 13x9x2 inch glass baking dish or other decorative serving dish with half of the ladyfingers. Spread half of the jam mixture over the ladyfingers. Spread half of the mascarpone mixture over the jam mixture, then cover with half of the fresh raspberries. Repeat layering with the remaining ladyfingers, jam mixture, mascarpone mixture and raspberries. Cover and refrigerate at least 3 hours or overnight.
4. Dust with the confectioners sugar and serve.

We have been so blessed to have Lilly as part of our Lifestyle Pilates Family! Watching her grow as a teacher, enjoying her fabulous energy, and bubbly personality. We can’t believe it has been a year since she has started this journey with all of us. Make sure to stop in and wish her a very Happy Anniversary!

I’m sure you have meet Liz already. Her bright energy is a great addition to our studio. She is a current client and completed our MAT I & II AND REFORMER I & II TEACHER TRAINING program. You will see her name on the schedule under APPRENTICE TEACHING. Enjoy taking one of her classes for free for the month of March. She is working on her practice teaching hours to obtain her Certification of Completion for REFORMER TRAINING. We are so excited to welcome Liz to our studion! “When I turned 40 I decided I wanted to get into shape. But how? I tried a personal trainer, and running, but I didn’t get the results I was looking for. I then looked into Pilates. Flash forward 5 years with Lifestyle Pilates and I’m now in the best shape of my life. I want to work with others in their fitness journey and that’s what inspired me to become a Pilates Instructor. I am married with 2 children and always believe family comes first. THE PLANK CHALLENGE HAS RETURNED!

Master our PLANK CHALLENGE for a seriously stronger core! Starting March 4th we will be challenging our body by increasing our planking time each week to bring more strength and stability to our core.
CORNED BEEF AND CABBAGE SOUP

Ingredients
1 medium onion, quartered
3 stalks celery, quartered
3 medium carrots, quartered
3 tablespoons unsalted butter
Heaping 1/4 teaspoon ground allspice
1 pound plum tomatoes, halved
3 cups low-sodium beef broth
4 cups chopped green cabbage (about 1/4 medium head)
1/2 pound Yukon gold potatoes, chopped
3/4 cup quick-cooking barley
1/4 pound corned beef, cut into thin strips (use leftovers or deli meat)
Kosher salt and freshly ground pepper

Directions
Pulse the onion, celery and carrots in a food processor until they are pea-size pieces. Melt the butter in a large pot over medium-high heat. Add the chopped onion, celery and carrots and the allspice and cook, stirring occasionally, until the vegetables are slightly softened, about 5 minutes. Add the tomatoes to the food processor and pulse until finely chopped. Transfer the tomatoes to the pot and add the beef broth, cabbage, potatoes, barley and 4 cups water; cover and bring to a boil. Uncover, reduce the heat to medium low and simmer until the potatoes and barley are tender, about 20 minutes. Stir in the corned beef and season with salt and pepper.

MELISSA’S favorite CHILI RECIPE

Pumpkin Turkey Chili with Roasted Poblano Peppers

Prep Time: 15

Cook Time: 30

Total Time: 45 minutes

Yield: 6 Servings

Ingredients

5 cloves garlic

1 large poblano pepper

2 tablespoons olive oil

1 small red onion, diced

1 lb. 99% ground turkey

1 15 oz. can pumpkin puree

2 15 oz. cans diced tomatoes

3 tablespoons tomato paste

1 tablespoon maple syrup

1/2 cup water or chicken broth (or more depending on how

thick you like your chili)

1 tablespoon sriracha

2 tablespoons chili powder

1 teaspoon smoked paprika (less or more depending on how

much spice you like!)

1/8 teaspoon sea salt

pepper, to taste

2 avocados (optional)

1/2 cup cheddar cheese (optional)

Instructions

First, preheat oven to 400oF and spray a baking sheet with nonstick cooking spray.

Then, place a large poblano pepper and 5 cloves of garlic on the baking sheet. Drizzle the pepper with olive oil and season with salt and pepper. Then place in the oven for 15 minutes, flipping half way.

Once the poblano pepper has beautiful roasting marks on it, remove from oven and let cool for 5 minutes. Use a sharp knife to cut the top off and then remove the seeds.

Place the roasted poblano pepper, garlic cloves, and a can of pumpkin puree in a high-speed food processor and process until everything s pureed together. Set aside.

Prepare chili by heating olive oil to medium/high heat. Then, add in a diced small onion and sauté for a few minutes or until translucent.

Add ground turkey and and sauté until full browned. Add the rest of the ingredients and mix until combined.

Cover and let simmer for 10 minutes before serving.*

Serve with avocado and white cheddar cheese!

Notes

*Depending on how thick you like your chili, feel free to add more liquid!
